Grafting fruit trees

Hi, I am looking for some advice on grafting fruit trees, I am in the Marlborough Sounds and surrounded by great fruit trees that I would like to get cuttings from. What is the method? I have read the general guidelines but anything more specific would be much appreciated. Looking in particular at citrus fruit trees. Thanks so much for any help.
